Baby calamari andalusian style
Ingredients
  • 1 Lb Baby calamari
  • fine Semolina (Farina de blat dur)
  • Olive oil c/s
  • Salt
Directions

Clean the cartilage on the baby calamari and add salt and flour.

In a “parisina” pan with very hot olive oil deep fry the baby calamari. Once fried and crunchy put them on a plate with absorbent paper to eliminate the oil.

This is a very classical dish on south Spain.
