Baby calamari with vegetables and wild mushrooms
Ingredients
  • 12 oz. clean baby calamari
  • 8 green asparagus peeled and blanched
  • 8 white asparagus peeled and boiled
  • 16 green beans blanched
  • 16 Mini green onions blanched
  • 8 Mini carrots blanched
  • 4 Boiled artichoke
  • 4 Spoons of green peas blanched
  • 4 Boiled ratte potatoes.
  • 5 oz. wild mushrooms
  • 3 Scallions
  • 2 oz. smoked bacon
  • 2 garlic
  • Beef broth c/s
  • sherry wine c/s
  • Extra virgin olive oil. c/s
  • Salt and pepper
  • Chicken or duck broth c/s
  • Chopped parsley c/s
Directions

Chop the scallions, garlic and bacon, and sautee with a little olive oil.

Once ready, add all the vegetables. Add the chopitos that we have previously sautéed on a very hot pan with olive oil.

Let everything cook for about 2 minutes and dress with chicken broth, olive oil and parsley.

If necessary add salt.

Depending on the mushrooms you can sauté in a different pan and then added at the end or cook it together with the vegetables.
