  • 20 carabineros
  • 2 Lb. coarse salt, flor de sal

For this preparation we set a base of coarse salt on a special pan with micro wholes, special for charcoal cooking. We will set the Carbinerios one next to the other and we will cover everything with the Flor de Sal. We will wet the salt to keep a high level of humidity, which will almost steam the carabineros.

You can also cook it on a flat grill. The difference is that on the flat grill you will lose the smoke aroma of the charcoal grill, but you will win purity of flavor.
