Shredded Codfish Salad With Tomatoes, Herbs And Tapenade
Ingredients
  • 7 oz. Shredded codfish
  • 6 Ripe tomatoes
  • 3 small onions(pimento) Lettuce, endive and herbs
  • 2 oz. Kalamata olives
  • Extra Virgin Olive Oil
  • Vinegar
Directions

This is a very traditional salad in Catalonia.

Blanch the ripe tomatoes, and cool them off in water and ice. Peel and seed and chopped them on ½ inch dices. Season with olive oil and set aside.

Take the shredded codfish and placed at the bottom of the plate and season, add the tomato and topped with the greens and the olives.
