  • Salted Codfish Skins
  • Extra Virgin Olive Oil
  • Smoked red paprika (pimento)s
Directions

Soak the codfish skins in cold water to desalinate them. Time can vary from 1 to 6 hours. Once it is rehydrated, clean the skins thoroughly from any meat left over's, clean the scales and place in the oven to dry at 150F for 24 hours. Once they are dry, deep fry in olive oil and then season with smoked paprika. If needed add sea salt.
