Octopus with butternut squash and pork jawl
Ingredients
  • 1 Pulpo de Playa
  • 8 Squash Diced
  • 1 Pork jowl bacon
  • Smoked red pepper a/n
  • Salt a/n
  • Hot red pepper a/n
  • Extra virgin olive oil
  • Skewers
Directions

Octopus
Cut the octopus an put on a “gastronom” (oven rack) with wholes and another one underneath to collect the juices.

Steam the pulpo de Playa in an oven at 210F during 1 hour approximately. Cool off and set aside.

Pork jowl bacon
boil the pork jowl in a vacuum bag for 5-6 hours. Once cooked cool it of with water and ice and set aside.

Butternut squash
Cut in 1,5 inch dice, and boiled in water and salt. Once ready cool it off with water.

Set up
Cut thick slices of octopus. Cut the pork jowl in 1,5 inches dice and cook them on the flat grill until golden.

Finally place the octopus the squash and the pork jowl on the skewer and heat it in the oven. Dress with olive oil, smoked red pepper, hot red pepper and coarse salt
