Pork Rib And Cod Tripe Rice
Ingredients
  • 14 oz. Bomba rice
  • 4 Scallions
  • 4 Garlic cloves
  • 1l. Cod and vegetable broth.
  • 7 oz. codfish tripe
  • 7 oz. pork ribs cut in one inch dice
  • 0.2 oz. Spicy chives
  • Extra Virgin Olive Oil
Directions

In a cast iron pot, sauté the pork ribs, and set aside. Add to the pot the previously chopped scallions and the garlic, and once they are golden add the rice. Add broth and let it boil for 8/9 minutes. Add the cooked and rehydrated tripe. Add the pork ribs, and let it cook all together until the rice is ready. Add salt if needed, and remove from heat.
Add the spicy chives.

To cook the tripe, clean and soak it in a pot with plenty of cold water. Put it on the stove until it stars boiling. Then remove from heat and set aside.
