Traditional Codfish Brandade
Ingredients
  • 2.2 lb. Shredded codfish
  • 1l. Extra virgin Olive Oil
  • 2 Garlic heads
  • 2 o 3 “guindilla peppers”
Directions

Add olive oil in a pan, add the guindilla peppers and garlic, and heat it up until the garlic is golden. Remove the garlic and pepper and in the same oil add the shredded codfish. Let it cook for 5 minutes and then grind it until obtaining a very creamy brandade. You may add cream to make it creamier.

This preparation can be eaten by itself or next to toasts or it can be use to fill up raviolis or a cannelloni or also as a side dish for other cold, warm or hot dishes.
