Our tuna is wild-caught in the Mediterranean Sea and processed onboard Japanese vessels using the ikajime method—renowned for preserving texture and reducing stress. Within an hour of being caught, each cut is flash-frozen at –60ºC to lock in its vibrant color, clean flavor, and rich umami.
This ultra-low temperature stops oxidation and prevents water loss, ensuring the fish maintains its integrity even after thawing. The result is sashimi-grade tuna with the consistency, safety, and purity demanded by top kitchens.
