How to make a delicious octopus Marrana
How to cook octopus marrana (our octopus Stew Recipe) is the third recipe in our octopus recipe series. This recipe is the most unique recipe in the series, offering an original take on this traditional dish.
Octopus marrana is a specialty from Almeria where it is usually served as a tapas in restaurants or at home. If you would like to feel like in southern Spain, this is the recipe you need!
Octopus stew recipe: Octopus Marrana
Ingredients
1 octopus
2 onions
3 red tomatoes
1 head of garlic
2 bay leaves
200 milliliters of white wine (around ¾ cup)
Salt to taste Black peppercorns to taste
Extra virgin olive oil
Preparation
Time: 60min
1- Peel and chop the onions, then peel the garlic, crush them with the blade of a knife, and reserve.
2- Wash and chop the tomatoes and reserve.
3- In a saucepan with extra virgin olive oil, sauté the onion. When the onion is soft, add the tomatoes and then the garlic.
4- Season to taste with salt and pepper, and add the bay leaves.
5- Wash and cut the octopus into small pieces. If it is frozen it will be more tender, because when it freezes the fibers break, and add it to the pot. If you got frozen octopus, thaw it before washing and then cut it.
6- Add the white wine.
7- Cook for a few minutes over high heat and when it starts to boil, lower the heat, cover the pan, and simmer over low heat for about 50 minutes.

You can make this recipe with pre-cooked octopus, but we recommend getting a raw one because cooking with the wine will give more flavor to your octopus.
