Branzino (Dicentrarchus labrax)

FR. Bar commun. IT. Branzino. SP. Lubina. PR. Robalo. CT LLobarro. GR λαβράκι

Raising fish in estuaries is sustainable, organic and produces Branzino (European bass) of the highest quality and freshness. The high levels of salt have a very positive impact on the flavor of the meat of the sea bass, which is more fatty, flavorful, buttery and juicy.

The density of water is never greater than 5 kilograms per cubic meter. Thus, estuary fish live in a kind of spa, with no other predatory species than birds, growing without stress and well fed. The estuaries are, one hundred percent, integrated farms in Protected Natural Spaces, they are rafts and water channels in which no artificial material has been used, the entry of water is made taking advantage of the tides and the passage from one raft to another, by gravity. The Seabass feeds on worms, fish, crustaceans, mollusks, and sometimes eats algae and green sea plants.

He loves all shellfish, from shrimp and shrimp to any type of marine crab. Their teeth are so strong that a medium-sized individual of this species is able to crush oysters, clams, or cockles with astonishing ease. Its mouth and jaws are designed to beat the shells with which shellfish are protected.

Cooking Tips

As we explained before, the best way to cook European sea bass would be with olive oil and aromatic herbs. Steaming it will enhance the flavor, but you can cook it anyway you like: in the oven, roasted, grilled, and so on.

If you’re looking for more inspiration, we invite you to check out this page to find more than 30 Sea Bass recipes. Considering the Branzino belongs to the Sea Bass family, you can cook it the very same way!

Enjoy!
